1 rack baby back ribs (about 2.5 lbs)
Juice of 1 young coconut
1 shallot, sliced
1 tsp salt
½ tsp black pepper
2 tbsp sugar
2 tbsp water
1 tbsp oil
Green onion & red jalapeno for garnish (optional)
